Softaste (quality enhancement agent for processed meat and seafood products)

Softens tough meat, increases flavor, and improves yield.
Increases the value of processed meat products as it can be processed without affecting flavor. This effect lasts even when frozen and can be used in seafood products.

Basic Information

Basic usage examples

  1. 1.Use this product at the ratio 0.5-1.0% of the weight of meat. *Dissolve this product in an amount of water 6-9 times that of the product.
  2. 2.Add a dilute solution to this product and soak the meat in it. *Do not add other seasonings.
  3. 3.Chill/allow to mature in refrigerator for a minimum of 3 hours or overnight.

*If you want to add other seasonings, do so after the maturing process. This sometimes gives meat a slight saltiness, so please adjust the amount if necessary.

Ex.: Dissolve 7 g of the product in 60 g of water for 1 kg of imported steak.

Meat containing Softaste was found to be softer and better-tasting by both mechanical measurements and human sensory evaluations.

Foods expected to have the effects

  • Frozen meat, general processed seafood
  • Beef, pork, chicken, lamb, organs, etc
  • Retains the effect even if frozen.
