Sodium lactate

Sodium lactate has a cushioning effect to stabilize the pH of foods. It is also used in many foods as a seasoning to improve flavor. Sodium lactate has excellent moisture-retaining effects that are not affected by temperature and humidity, which helps retain moisture even at low temperature and low humidity.

With a strong water-retention effect, it is an ideal alternative to propylene glycol.
It has a bacteriostatic effect, which helps extend the shelf life of food.

Effects

Water-retention effect of Sodium Lactate 50%

Sodium Lactate 50% demonstrates its water-retention effect even under conditions of low temperature and low humidity. Demonstrates an anti-drying effect in various foods, particularly delicacies and confectioneries.

Bacteriostatic effect of Sodium Lactate 50%

Sodium Lactate 50% demonstrates a bacteriostatic effect by itself or when it is combined with alcohol. Meats: Increases shelf life by applying Sodium Lactate 50% to the surface of the product before processing. Raw noodles: Demonstrates a bacteriostatic effect when combined with alcohol and kneaded.

Effect of Sodium Lactate 50% to lower water activity

Sodium Lactate 50% has excellent properties to lower water activity, which prevents the growth of bacteria and microorganisms when added to compounds.
